What is masala aloo, how do you make delicious aloo masala at home
A North Indian dry flavorful aloo masala recipe. This is a dry aloo Masala using aromatic spices and easy to make. In this recipe, boiled aloo are first lightly fried and then cooked with spices like coriander seeds, black peppercorns, fennel seeds, red chili powder and much more.

A number of Ingredients that’s are used in this masala aloo recipe
- 20 pc Boiled Baby Aloo
- 2 Tbsp Coriander seeds
- 1 Tbsp Cumin seeds
- 1 Tbsp Black Peppercorns
- 1 Tsp Fennel seeds
- 3 Dried red chili
- 2 Bay leave
- 1 Tsp Ginger finely chopped
- 1 Tsp Garlic finely chopped
- a half Tsp Dried mango powder
- 1 Tsp Red chili powder
- 3 Tbsp Oil
- Salt to taste
Step by step Preparation of masala aloo recipe
Step 1:
In a deep pan, boil the baby aloo adding 4-5 cup of water and some salt.Step 2:
When baby aloo gets soft then strain the aloo into the pan and place into a bowl.
Step 3:
Turn on the gas, take a pan and dry roast
- 1 Tbsp of coriander seeds,
- 1 Tbsp of cumin seeds,
- 1 Tsp of fennel seeds,
- 3 Red Chili
Step 4:
When the allspice spread their fragrant well, then transfer all the spices to a mixer jar and grind it dry medium papery powder.
Step 5:
Heat 3 Tbsp of oil in a pan.Step 6:
When oil heat, add- 2 bay leaves,
- 1 Tsp of finely chopped ginger,
- 1 Tsp of finely chopped garlic,
Step 7:
Saute allspice for 30 seconds.Step 8:
After that added baby boiled aloo to the pan, and saute for 1 minute.
Step 9:
After fry, the baby aloo add them- 1 Tbsp of black peppercorn powder,
- 1 Tsp of red chili powder,
- 1 Tsp of dried mango powder,
- some salt to taste,
Step 10:
Mix it well and still saute all things.
Step 11:
At last, add spice dry grind masala to the aloo and mix well add a little bit water and cook the 3-4 minute.
Step 12:
When Aloo is done. Place the masala aloo to bowl.
